GREAT BIG POPCORN BALLS
Member Kelly Couch put names of books inside her popcorn balls, replicating the names and addresses of North Platte girls to whom the soldiers could write that were placed inside their popcorn balls as a special surprise.
In his research, Greene discovered that two soldiers had ended up marrying girls whose names had been in their popcorn balls.
3/4 cup light corn syrup
1/4 cup margarine
2 teaspoons cold water
2 5/8 cups confectioners’ sugar
1 cup mini marshmallows
7 quarts plain popped popcorn (about four popcorn bags)
1 teaspoon vanilla extract
In a large saucepan over medium heat, combine the corn syrup, margarine, cold water, confectioners’ sugar and marshmallows.
Heat and stir until the mixture comes to a boil.
Carefully combine the hot mixture with the popcorn, coating each kernel.
Cover hands with sandwich bags, spray with non-stick spray and quickly shape the coated popcorn into balls before it cools.
Wrap individually in plastic wrap and store at room temperature.
